Our butter is mixed with other ingredients (e.g. anchovies, curry or herbs) which enrich it with savor and aroma.
This type of butter is usually employed in the preparation of canapés and gravy. We also use it as the basis for the preparation of some sauces, to accompany cold dishes, as a variation of the classic butter, or as the basis for cooking fried meat dishes.
The use of the techniques which we have specifically experimented has allowed us to develop elaborated butters respectful of the flavor and of the colors of the ingredients that are employed for their preparation. Moreover, all our butters are drawn.
Infused Olive Oils
The influence of the Mediterranean cuisine to which we belong reflects on our own cuisine in the use of the olive oil as one of the main ingredients in our recipes.
